Ingredients
  

For the Cake:

  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk

For the Raspberry Mousse:

  • 1 cup fresh or frozen raspberries
  • 2 tablespoons sugar
  • 1 teaspoon gelatin powder
  • 2 tablespoons water
  • 1 cup heavy cream

For the Chocolate Ganache:

  • ½ cup heavy cream
  • 4 oz dark chocolate chopped

Instructions
 

  • Preheat the Oven: Preheat oven to 350°F (175°C). Grease and line two 8-inch round pans.
  • Make the Cake: Whisk flour, cocoa, baking powder, baking soda, and salt. In another bowl, beat sugar, oil, eggs, and vanilla. Alternate adding dry ingredients with buttermilk until smooth.
  • Bake: Divide batter into pans and bake for 25–30 minutes. Cool completely.
  • Prepare Raspberry Mousse: Heat raspberries and sugar in a pan until soft, then strain. Dissolve gelatin in water and mix into warm raspberry puree. Cool slightly, then fold in whipped cream. Chill for 15 minutes.
  • Assemble: Place one cake layer on a plate, spread raspberry mousse evenly, then top with the second cake layer.
  • Make Ganache: Heat cream until just boiling, pour over chocolate, and stir until smooth. Cool slightly, then pour over the cake.
  • Serve: Chill for 1 hour before slicing. Garnish with fresh raspberries and chocolate shavings.
