  • 1 lb chicken breast cooked and shredded
  • 1 tablespoon olive oil
  • 1 large onion sliced
  • 2 bell peppers red and green, sliced
  • 1 packet fajita seasoning mix
  • 1 cup cooked rice optional for a heartier dish
  • 1 can 15 oz diced tomatoes, drained
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

For Garnish (Optional):

  • Fresh cilantro chopped
  • Sliced jalapeños
  • Lime wedges

Instructions
 

Preheat the Oven:

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

Prepare the Vegetables:

  • Heat olive oil in a large skillet over medium heat. Sauté the sliced onions and bell peppers until softened (about 5 minutes). Add the fajita seasoning and cook for another 1-2 minutes until fragrant. Remove from heat.

Assemble the Casserole:

  • In the prepared baking dish, layer the cooked chicken, sautéed veggies, rice (if using), and diced tomatoes. Spread sour cream over the top, then sprinkle with shredded cheddar and mozzarella cheeses.

Bake:

  • Bake for 20–25 minutes, or until the cheese is melted and bubbly. Let it rest for 5 minutes before serving.

Notes

Make Ahead:
This casserole can be assembled ahead of time and refrigerated for up to 1 day before baking. You can also freeze it for up to 3 months. Thaw overnight in the fridge before baking.
