CHICKEN AND BACON FRIED RICE

This Chicken and Bacon Fried Rice is a quick, savory meal with tender chicken, crispy bacon, vegetables, and perfectly seasoned rice. Perfect for weeknight dinners.

Ingredients
  

For Fried Rice:

  • 2 cups cooked rice preferably day-old
  • 1 lb boneless chicken breast diced
  • 6 slices bacon chopped
  • 1 cup mixed vegetables peas, carrots, corn
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

Instructions
 

Cook Bacon:

  • Cook bacon in a large skillet over medium heat until crispy. Remove and set aside.

Cook Chicken:

  • In the same skillet, cook diced chicken until fully cooked and lightly browned. Season with salt and pepper.

Sauté Vegetables:

  • Add garlic and mixed vegetables. Sauté for 2–3 minutes until vegetables are tender.

Cook Eggs:

  • Push everything to one side of the skillet. Pour in beaten eggs and scramble until cooked.

Combine Ingredients:

  • Add cooked rice, bacon, soy sauce, and sesame oil. Stir well to combine and heat through.

Serve:

  • Garnish with chopped green onions. Serve hot.

  • Make Ahead: Cook rice ahead for faster preparation.
  • Variations: Add bell peppers or snap peas for extra vegetables.
