Ingredients

For the Chicken:

  • 2 boneless skinless chicken breasts (butterflied and halved for 4 fillets)
  • ½ cup dill pickle juice
  • ½ cup whole milk
  • 1 large egg
  • 1 cup all-purpose flour
  • 2 tablespoons powdered sugar
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper optional
  • Peanut oil for frying

For the Sandwiches:

  • 4 hamburger buns toasted
  • 2 tablespoons butter for buns
  • Dill pickle slices 8–12 slices

Instructions

Marinate the Chicken:

  • Place chicken pieces in a bowl with pickle juice. Marinate in the fridge for at least 30 minutes.

Prepare Breading Station:

  • In one bowl, whisk together milk and egg. In another bowl, combine flour, powdered sugar, and spices.

Coat the Chicken:

  • Dip each piece of marinated chicken in the flour mixture, then into the milk-egg wash, then again into the flour mixture. Press to coat well.

Heat Oil and Fry:

  • Heat about 1 inch of peanut oil in a skillet to 350°F (175°C). Fry chicken pieces 3–4 minutes per side, or until golden brown and cooked through.

Toast the Buns:

  • Lightly butter and toast hamburger buns in a skillet or oven.

Assemble Sandwiches:

  • Place 2–3 dill pickle slices on the bottom bun. Top with hot fried chicken and the top bun.

Notes

  • Make Ahead: Chicken can be marinated overnight for stronger flavour.
  • Customizing the Flavor: Add a spicy mayo or coleslaw for a twist. Use brioche buns for extra richness.
  • Serving Suggestions: Serve with waffle fries, coleslaw, or a fresh salad.
  • Allergy-Friendly Options: Use gluten-free flour and dairy-free milk for allergen-sensitive diets.
  • Storage Tips: Store leftover fried chicken in the fridge for up to 3 days. Reheat in the oven for crispiness.
