Ingredients

  • 1 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • ½ cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup powdered sugar for rolling

Instructions

Make the Dough:

  • In a large bowl, mix cocoa powder, sugar, and oil. Add eggs one at a time, then vanilla. In a separate bowl, whisk flour, baking powder, and salt. Gradually combine with wet ingredients until fully incorporated.

Chill:

  • Cover dough and chill for at least 3 hours or overnight — dough should be firm.

Preheat Oven:

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

Shape & Coat:

  • Scoop 1-inch balls of dough and roll generously in powdered sugar. Place 2 inches apart on baking sheets.

Bake:

  • Bake 10–12 minutes. Cookies will puff and crack on top but remain soft inside. Let cool on the pan for 5 minutes before transferring to a wire rack.

Notes

  • Chill longer for better cracks and less sticky dough.
  • Don’t overbake — they should be soft in the center.
  • Add a dash of espresso powder for extra chocolate depth.
