Cheesy Rice is creamy, comforting, and loaded with melty cheese. This easy side dish pairs perfectly with chicken, beef, or veggies and is a kid-friendly favourite for busy weeknights or holiday dinners.

Ingredients
  

  • 1 tablespoon butter
  • 1 cup long grain white rice
  • 2 cups chicken broth or water + bouillon
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt adjust to taste
  • 1 cup shredded cheddar cheese
  • ¼ cup milk or heavy cream
  • Optional: chopped parsley extra cheese for topping

Instructions
 

Toast Rice:

  • In a medium saucepan, melt butter over medium heat. Add rice and cook for 2–3 minutes, stirring frequently.

Cook Rice:

  • Pour in chicken broth, garlic powder, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.

Add Cheese and Milk:

  • Remove from heat. Stir in shredded cheese and milk until melted and creamy.

Serve:

  • Garnish with parsley or extra cheese, if desired. Serve hot.

Notes

  • Make it Spicy: Add a pinch of cayenne or stir in diced jalapeños.
  • Vegetarian Version: Use vegetable broth instead of chicken broth.
  • Add Veggies: Stir in cooked peas, corn, or broccoli for added nutrition.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of milk.
