Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can kidney beans, drained and rinsed
  • 1 10 oz can diced tomatoes with green chiles
  • 1 10 oz can red enchilada sauce
  • 1 cup beef broth
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 1 ½ cups shredded cheddar cheese
  • Optional toppings: sour cream green onions, crushed tortilla chips

Instructions
 

Cook the Beef:

  • Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.

Add Onion and Garlic:

  • Stir in diced onion and minced garlic. Cook until softened, about 3 minutes.

Add Seasonings:

  • Mix in chili powder, cumin, paprika, salt, and pepper.

Combine Remaining Ingredients:

  • Add black beans, kidney beans, diced tomatoes with green chiles, enchilada sauce, and beef broth. Stir well.

Simmer:

  • Bring to a simmer, cover, and cook for 20–25 minutes, stirring occasionally.

Add Cheese:

  • Stir in shredded cheddar cheese until melted and creamy.

Serve:

  • Top with sour cream, green onions, or crushed tortilla chips if desired.

Notes

  • Add jalapeños or hot sauce for extra spice.
  • Store leftovers in the fridge up to 4 days or freeze for 2 months.
  • Serve with cornbread or tortilla chips for a complete meal.
