1 sheet puff pastry thawed 1 cup fresh spinach chopped ½ cup ricotta cheese ¼ cup feta cheese crumbled ¼ cup shredded mozzarella cheese 1 clove garlic minced 1 egg for brushing Salt and pepper to taste

Preheat Oven: Preheat to 375°F (190°C) and line a baking sheet with parchment paper.
Make Filling: In a bowl, combine spinach, ricotta, feta, mozzarella, garlic, salt, and pepper.
Assemble Pastries: Cut puff pastry into squares. Add a spoonful of filling to the centre, fold, and seal edges with a fork.
Brush and Bake: Brush tops with beaten egg and bake for 18–20 minutes until golden and puffed.
Serve: Serve warm with a dipping sauce or salad.
Tip: Use frozen spinach (thawed and drained) for convenience.
Variation: Add cooked mushrooms or sun-dried tomatoes for extra flavour.
