Ingredients

  • 12 oz pasta (rotini or elbow)
  • 1 large cucumber, diced
  • 2 medium tomatoes, chopped
  • 1 cup corn kernels
  • ¼ cup red onion, finely diced
  • 1 cup cheddar cheese, cubed

For the Dressing:

  • ½ cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional Add-Ins:

  • 2 tablespoons fresh parsley, chopped
  • 2 pieces hard-boiled eggs, chopped

Instructions
 

Cook Pasta

  • Boil pasta in salted water until al dente. Drain and rinse with cold water.

Prep Vegetables

  • Chop cucumber, tomatoes, onion, and any add-ins while pasta cools.

Make Dressing

  • Whisk mayonnaise, lemon juice, olive oil, garlic powder, salt, and pepper until smooth.

Combine

  • In a large bowl, mix pasta, vegetables, corn, and cheese. Pour dressing over and toss well.

Chill & Serve

  • Refrigerate for at least 1 hour before serving for best flavor.
