Ingredients

For the Cocktail:

  • 2 oz bourbon or whiskey
  • ½ oz pineapple juice
  • ¼ oz simple syrup
  • 2 –3 dashes bitters
  • 1 cinnamon stick for garnish
  • Charred pineapple pieces
  • Ice

Instructions
 

Char the Pineapple:

  • Sprinkle pineapple with brown sugar if using. Sear in a hot skillet or grill until caramelized and lightly charred on both sides.

Muddle:

  • In a glass, muddle one piece of charred pineapple with simple syrup and bitters.

Build the Drink:

  • Add whiskey, pineapple juice, and ice. Stir until chilled.

Garnish:

  • Add another charred pineapple piece and a cinnamon stick. Serve immediately.
