For Ceviche
- 1 lb fresh white fish such as tilapia or cod, cut into small cubes
- ½ cup fresh lime juice about 4–5 limes
- ¼ cup red onion finely chopped
- ½ cup tomatoes diced
- ¼ cup cilantro chopped
- 1 jalapeño finely chopped, optional for heat
- ½ teaspoon salt
- ¼ teaspoon black pepper
