Ingredients
  

For the Filling:

  • 2 tablespoons unsalted butter
  • 3 large onions thinly sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme or ½ teaspoon dried
  • 1 teaspoon sugar optional, for caramelizing
  • 1 cup gruyère cheese shredded

For the Crust:

  • 1 sheet puff pastry thawed
  • 1 egg egg beaten for egg wash

Instructions
 

Caramelize Onions:

  • In a skillet, melt butter over medium-low heat. Add sliced onions and cook slowly, stirring occasionally.
  • Season with salt, pepper, and thyme. Add sugar if desired. Cook for 25-30 minutes until onions are soft and golden brown.

Prepare Tart:

  • Preheat oven to 400°F (200°C). Roll out puff pastry onto a baking sheet.
  • Score a 1-inch border around the edges without cutting through. Prick the center with a fork.

Assemble:

  • Spread caramelized onions evenly over the pastry, staying within the border.
  • Sprinkle shredded Gruyère cheese on top.
  • Brush edges with beaten egg.

Bake:

  • Bake for 20-25 minutes until pastry is golden and cheese is melted.
  • Let cool slightly before slicing and serving.
