Ingredients
  

For the French Toast:

  • 4 large eggs
  • ½ cup milk
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 tablespoon sugar
  • Pinch of salt
  • 8 slices brioche or challah bread
  • 2 tablespoons butter for frying

For the Caramelized Bananas:

  • 2 tablespoons butter
  • ¼ cup brown sugar
  • 2 ripe bananas sliced
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract

Instructions
 

  • Prepare Custard: In a bowl, whisk together eggs, milk, cream, vanilla, cinnamon, sugar, and salt.
  • Dip Bread: Dip each slice of bread into the custard mixture, coating both sides evenly.
  • Cook French Toast: Melt butter in a skillet over medium heat and cook each slice for 2–3 minutes per side, until golden brown. Keep warm.
  • Caramelize Bananas: In another skillet, melt butter and add brown sugar. Stir until bubbly, then add bananas, cinnamon, and vanilla. Cook 2–3 minutes until soft and caramelized.
  • Assemble: Place French toast on plates and spoon caramelized bananas and sauce over the top. Serve immediately.
