Ingredients
  

  • 1 box 15.25 oz cake mix (any flavor, but chocolate or vanilla works best)
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract optional
  • ¼ cup powdered sugar for rolling

Instructions
 

  • Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Make the cookie dough:

  • In a large mixing bowl, combine the cake mix, eggs, vegetable oil, and vanilla extract. Stir until the dough is well combined and smooth. The dough will be thick.

Roll the dough:

  • Scoop out tablespoon-sized portions of dough and roll them into balls.
  • Roll each dough ball in powdered sugar until it is fully coated.

Bake the cookies:

  • Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops have cracked. The cookies should be soft in the center.

Cool and serve:

  • Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • You can use any cake mix flavor for these cookies—chocolate, vanilla, red velvet, or even lemon for a fun twist.
  • For added flavor, mix in some chocolate chips, sprinkles, or nuts into the dough before rolling.
  • If you like your cookies a little thicker, chill the dough for 30 minutes before baking.
  • These cookies are best stored in an airtight container at room temperature for up to 4-5 days.
