Ingredients
  

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • In a large pot or Dutch oven, cook the ground beef over medium heat until browned and cooked through. Drain any excess grease.
  • Add the chopped onion and minced garlic to the pot. Sauté until the onion is softened and fragrant, about 5 minutes.
  • Stir in the chopped cabbage, sliced carrots, and sliced celery. Cook for an additional 5 minutes, stirring occasionally.
  • Pour in the diced tomatoes and beef broth. Add the dried thyme, dried oregano, paprika, salt, and pepper. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat and let simmer for 30-35 minutes, or until the vegetables are tender and the flavors have melded together.
  • Taste and adjust the seasoning with more salt and pepper if needed.
  • Serve the soup hot, garnished with fresh parsley.
