BUTTER STEAK BITES WITH GARLIC HERB POTATOES

These Butter Steak Bites with Garlic Herb Potatoes are a delicious and easy one-pan meal. Tender steak pieces are pan-seared to juicy perfection and then tossed in a rich butter sauce, served alongside crispy, flavorful garlic herb potatoes.

Ingredients
  

Steak Bites:

  • 1 pound sirloin steak cut into 1-inch cubes (or other tender cut like ribeye or filet)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Garlic Herb Potatoes:

  • 1 pound small potatoes Yukon Gold or red, quartered or halved if larger
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Butter Sauce:

  • 4 tablespoons ½ stick unsalted butter
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh thyme chopped
  • Salt and pepper to taste

Instructions
 

  • Prepare potatoes: Preheat oven to 400°F (200°C). In a large bowl, toss the quartered potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Spread them in a single layer on a baking sheet.
  • Roast potatoes: Roast the potatoes in the preheated oven for 20-25 minutes, or until they are tender and crispy, flipping halfway through.
  • Sear steak bites: While the potatoes are roasting, prepare the steak bites. Pat the steak cubes dry with paper towels. Season them with salt and pepper. Heat the olive oil in a large skillet (preferably cast iron) over medium-high heat. Once the oil is hot, add the steak cubes to the skillet, making sure not to overcrowd the pan. Sear for 2-3 minutes per side for medium-rare, or longer for your desired doneness. Remove the steak from the skillet and set aside.
  • Make butter sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute, until fragrant. Be careful not to burn the garlic. Stir in the parsley, thyme, salt, and pepper.
  • Combine steak bites and potatoes: Add the roasted potatoes and the seared steak bites to the skillet with the butter sauce. Toss to coat everything evenly.
  • Serve: Serve the Butter Steak Bites with Garlic Herb Potatoes immediately.

Notes

  • Steak: Sirloin is a good choice, but other tender cuts like ribeye or filet mignon work well. Adjust cooking times based on thickness and desired doneness. Use a meat thermometer for accurate results.
  • Potatoes: Yukon Gold or red potatoes are great for roasting. Leaving the skin on adds nutrients and texture.
  • Herbs: Fresh herbs are recommended, but you can substitute dried herbs if necessary. Use about 1 teaspoon of dried herbs for every tablespoon of fresh herbs.
  • Doneness: Don't overcook the steak bites. They will continue to cook a little bit after being removed from the heat.
Variations:
  • Spicy Steak Bites: Add a pinch of red pepper flakes or cayenne pepper to the steak seasoning or butter sauce.
  • Lemon Garlic Herb Potatoes: Add lemon zest and juice to the potato seasoning.
  • Mushroom Steak Bites: Add sliced mushrooms to the skillet along with the steak.
  • Onion & Pepper Steak Bites: Add sliced onions and bell peppers to the skillet.
  • Chimichurri Steak Bites: Serve the steak bites with chimichurri sauce instead of the butter sauce.
