Ingredients

  • 2 cups cooked broccoli finely chopped
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ¾ cup breadcrumbs plus extra for coating
  • 2 large eggs
  • 2 cloves garlic minced
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Oil for frying or cooking spray for baking

Instructions

Prepare Mixture:

  • In a large bowl, mix together chopped broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, garlic, onion powder, salt, and pepper until well combined.

Form Balls:

  • Shape the mixture into small balls, about 1 tablespoon each. Roll each ball in extra breadcrumbs for a crispy coating.

Cook:

  • To Fry: Heat oil in a deep skillet over medium heat. Fry balls in batches until golden brown, about 3–4 minutes per side.
  • To Bake: Preheat oven to 400°F (200°C). Place balls on a greased baking sheet, spray with cooking spray, and bake for 20–25 minutes, turning halfway.

Serve:

  • Serve warm with your favourite dipping sauce like ranch, garlic aioli, or marinara.

Notes

  • Make Ahead: Form and refrigerate the balls up to 1 day in advance before cooking.
  • Freezing: Freeze uncooked balls on a tray, then store in a freezer bag for up to 1 month. Bake or fry straight from frozen.
  • Customise: Add cooked rice or chopped spinach for extra texture and nutrients.
  • Dipping Idea: Great with spicy mayo, sour cream, or honey mustard.
