These Breakfast Taquitos are crispy, cheesy, and filled with scrambled eggs and breakfast favorites. Perfect for a quick morning meal or brunch with family.

Ingredients
  

For Filling:

  • 6 small flour tortillas
  • 4 large eggs beaten
  • ½ cup shredded cheddar cheese
  • ¼ cup bell peppers chopped
  • ¼ cup onion chopped
  • 2 teaspoons olive oil
  • Salt and pepper to taste

For Topping (Optional):

  • Optional toppings salsa, sour cream, or avocado slices

Instructions
 

Sauté Vegetables:

  • Heat olive oil in a skillet over medium heat. Sauté onion and bell peppers until soft.

Cook Eggs:

  • Add beaten eggs, salt, and pepper. Cook until scrambled and just set.

Assemble Taquitos:

  • Place a portion of scrambled eggs on each tortilla, sprinkle with cheese, and roll tightly.

Bake Taquitos:

  • Place taquitos seam-side down on a baking sheet. Bake at 400°F (200°C) for 10–12 minutes until golden and crispy.

Serve:

  • Serve hot, topped with salsa, sour cream, or avocado slices if desired.
