Ingredients
  

For the Fried Rice:

  • 3 cups cooked rice preferably day-old
  • 2 eggs beaten
  • 1 cup mixed vegetables carrots, peas, corn
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 slices bacon or sausage optional, chopped
  • 1 green onion sliced, for garnish

Instructions
 

Cook Meat (Optional):

  • Heat 1 tablespoon oil in a large pan over medium heat. Add bacon or sausage if using and cook until crispy.

Cook Vegetables:

  • Add mixed vegetables and sauté for 3–4 minutes until tender.

Cook Eggs:

  • Push veggies to one side. Add remaining oil and pour in beaten eggs. Scramble until fully cooked.

Combine Rice:

  • Add cooked rice to the pan. Drizzle with soy sauce and toss everything together until well combined and heated through.

Serve:

  • Serve hot, garnished with sliced green onions.

Notes

  • Make Ahead: Use leftover rice for best texture.
  • Variations: Add sausage, ham, or cooked chicken for extra protein.
  • Serving Suggestions: Serve hot with soy sauce or sriracha on the side.
