This classic breakfast casserole is hearty, cheesy, and loaded with eggs, sausage, and hash browns. It’s easy to make ahead and perfect for holidays, brunches, or a comforting weekend breakfast with the family.

Ingredients
  

  • 1 pound breakfast sausage
  • 6 large eggs
  • 2 cups milk
  • 1 26 oz bag frozen hash browns, thawed
  • 2 cups shredded cheddar cheese
  • ½ cup chopped onion
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooking spray or butter for greasing

Instructions
 

Preheat Oven:

  • Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.

Cook Sausage:

  • In a skillet, cook sausage over medium heat until browned and fully cooked. Drain and set aside.

Mix Ingredients:

  • In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper.

Assemble Casserole:

  • Spread thawed hash browns in the bottom of the dish. Top with cooked sausage, onion, and shredded cheese. Pour egg mixture evenly over the top.

Bake:

  • Bake uncovered for 45–50 minutes or until the eggs are set and the top is golden brown.

Cool & Serve:

  • Let cool for 5–10 minutes before slicing. Serve warm.

Notes

Make Ahead:
Assemble the casserole the night before, cover, and refrigerate. Bake in the morning as directed.
