Ingredients
  

For the Cookies:

  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Filling:

  • ½ cup pastry cream or custard

For the Topping:

  • ½ cup semi-sweet chocolate melted

Instructions
 

  • Preheat the Oven: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix Dry Ingredients: Whisk together flour, baking powder, baking soda, and salt. Set aside.
  • Make the Dough: Beat butter and sugar until fluffy. Add egg and vanilla, mixing well. Gradually add dry ingredients to form dough.
  • Shape Cookies: Scoop dough onto prepared sheet, spacing 2 inches apart. Flatten slightly. Bake 12–15 minutes until edges are lightly golden. Cool completely.
  • Add Filling: Pipe or spoon custard onto half the cookies, then sandwich with remaining cookies.
  • Top with Chocolate: Drizzle or spread melted chocolate over tops. Allow to set before serving.
