Ingredients
  

  • 1 10 oz can Rotel (drained)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 packet ranch dressing mix
  • 1 cup corn canned or thawed from frozen
  • ½ cup chopped green onions
  • Optional: diced jalapeños or chopped cooked bacon for added flavor

Instructions
 

  • Open the can of Rotel and drain well to avoid a watery dip. Set aside while preparing the rest of the ingredients.
  • In a large bowl, combine sour cream and the ranch dressing mix. Stir well until fully blended and smooth.
  • Add drained Rotel, shredded cheddar cheese, corn, and chopped green onions. Stir to combine everything evenly throughout the dip.
  • If you’re adding jalapeños, bacon, or other extras, stir them in now to enhance the flavor and texture of the dip.
  • Cover and refrigerate for at least 1 hour before serving. Serve chilled with tortilla chips, crackers, or fresh veggies.
