BLUEBERRY PASTRY RINGS WITH VANILLA CREAM

Ingredients
  

For the Pastry:

  • 1 sheet puff pastry thawed
  • ½ cup blueberry preserves or pie filling
  • 1 egg for egg wash

For the Vanilla Cream:

  • ½ cup cream cheese softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 –2 tablespoons milk or cream to adjust consistency

For Topping:

  • Powdered sugar for dusting optional
  • Fresh blueberries optional

Instructions
 

Prepare the Vanilla Cream:

  • In a bowl, beat cream cheese, powdered sugar, vanilla extract, and milk until smooth and pipeable. Chill until ready to use.

Prepare the Pastry Rings:

  • Preheat oven to 375°F (190°C). Unroll puff pastry on a lightly floured surface. Cut into 8 strips. Loop each strip into a ring and pinch ends to seal. Place on parchment-lined baking sheet.

Add Filling:

  • Spoon a small amount of blueberry preserves into the center of each ring. Brush pastry edges with beaten egg.

Bake:

  • Bake for 18–20 minutes or until golden brown and puffed. Cool slightly on a wire rack.

Add Vanilla Cream:

  • Pipe vanilla cream over cooled rings or into the center. Top with fresh blueberries if using.

Serve:

  • Dust with powdered sugar just before serving, if desired.

  • Make Ahead: Vanilla cream can be prepared a day ahead. Pastry rings are best served the same day but can be reheated lightly.
