Ingredients
  

For the Crust:

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • ¼ teaspoon salt

For the Blueberry Lemon Filling:

  • 1 ½ cups fresh blueberries
  • 2 large eggs
  • ¾ cup granulated sugar
  • ¼ cup lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons all-purpose flour

Instructions
 

Prepare Pan

  • Preheat oven to 175°C (350°F). Line an 8x8-inch pan with parchment paper.

Make Crust

  • Mix flour, melted butter, sugar, and salt until combined. Press into the pan evenly.

Bake Crust

  • Bake crust for 12–15 minutes until lightly golden.

Prepare Filling

  • Whisk eggs, sugar, lemon juice, lemon zest, and flour until smooth. Gently fold in blueberries.

Assemble

  • Pour filling over warm crust and spread evenly.

Bake Again

  • Bake for 20–25 minutes until set and slightly golden on edges.

Cool & Slice

  • Cool completely before slicing into bars and serving.

  • Best Texture: Chill before slicing for clean cuts.
  • Berry Swap: Use raspberries or mixed berries instead of blueberries.
