Ingredients

  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup unsalted butter softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon lemon zest optional

Instructions

Preheat the Oven:

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Mix Dry Ingredients:

  • In a medium bowl, whisk together flour, baking soda, and salt. Set aside.

Make the Dough:

  • In a large bowl, beat together butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, beating until well combined. Gradually add the dry ingredients and mix until just combined.

Add Blueberries:

  • Gently fold the blueberries and lemon zest (if using) into the dough, being careful not to crush the berries.

Shape the Cookies:

  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake:

  • Bake for 12–14 minutes or until the edges are lightly golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Make Ahead:
You can prepare the dough and chill it in the refrigerator for up to 24 hours before baking for an even richer flavor.
Customizing the Flavor:
Add white chocolate chips or a sprinkle of cinnamon for an extra layer of sweetness and warmth.
