For the Egg Rolls:

  • 8 oz cream cheese softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 10 egg roll wrappers
  • 1 egg beaten, for sealing
  • Oil for frying

For Dusting (Optional):

  • Powdered sugar
  • Cinnamon sugar

Instructions

Prepare the Filling:

  • In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the blueberries.

Assemble the Egg Rolls:

  • Place about 2 tablespoons of the filling onto the centre of each egg roll wrapper. Fold the sides in, then roll tightly, sealing the edges with the beaten egg.

  • Heat oil in a deep skillet to 350°F (175°C). Fry the egg rolls in batches for 2–3 minutes per side until golden brown. Drain on paper towels.

Serve:

  • Dust with powdered sugar or cinnamon sugar before serving if desired. Enjoy warm!

Notes

Make Ahead:
Prepare and roll the egg rolls ahead of time. Refrigerate for up to 4 hours before frying.
Customizing the Flavour:
Try adding a sprinkle of lemon zest or a few raspberries for a fruity twist.
Serving Suggestions:
Serve with a scoop of vanilla ice cream or a drizzle of chocolate sauce.
Allergy-Friendly Options:
Use dairy-free cream cheese for a vegan alternative and egg-free wrappers if needed.
Storage Tips:
Store leftovers in the fridge for up to 2 days. Reheat in an air fryer or oven for best crispiness.
