Ingredients
  

For the Pasta Salad:

  • 3 cups cooked rotini or penne pasta
  • 1 ½ cups cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 medium red bell pepper, chopped
  • ¼ cup red onion, finely diced
  • ½ cup black olives, sliced
  • 1 cup cheddar cheese cubes
  • ¼ cup fresh parsley, chopped

For the Creamy Dressing:

  • ½ cup mayonnaise
  • cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

Cook Pasta

  • Cook pasta according to package instructions. Drain and rinse with cold water to cool completely.

Prep Vegetables

  • Chop all vegetables and cheese into bite-sized pieces.

Make Dressing

  • Whisk together mayonnaise, Greek yogurt, lemon juice, olive oil, garlic powder, Italian seasoning, salt, and pepper until smooth.

Combine Salad

  • In a large bowl, mix pasta, vegetables, cheese, and parsley.

Add Dressing

  • Pour dressing over salad and toss until evenly coated.

Chill & Serve

  • Refrigerate for at least 1 hour before serving for best flavor. Stir before serving.
