Ingredients
  

  • 6 slices bacon chopped
  • 1 small onion diced
  • 3 cloves garlic minced
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup heavy cream
  • 4 cups peeled and diced potatoes russet or Yukon gold
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons sour cream
  • 2 green onions sliced (for garnish)

Instructions
 

Cook the Bacon:

  • In a large pot, cook bacon over medium heat until crispy. Remove and set aside, leaving about 1 tablespoon of drippings in the pot.

Sauté Veggies:

  • Add onion to the pot and cook until soft. Stir in garlic and cook for 1 minute.

Make the Base:

  • Sprinkle flour over the onions and cook for 1–2 minutes. Gradually whisk in chicken broth, then add milk and cream. Stir until smooth.

Add Potatoes & Simmer:

  • Stir in potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.

Blend & Finish:

  • For a smooth soup, mash some of the potatoes or blend part of the soup. Stir in cheddar cheese and sour cream. Return bacon to the pot or use for topping.

Serve:

  • Ladle into bowls and top with green onions, extra cheese, and bacon bits.

Notes

Make Ahead:
Soup can be made a day ahead and reheated. It thickens slightly on standing.
Variations:
Add corn or chopped carrots for extra flavour and texture.
Storage Tips:
Store in an airtight container in the fridge for up to 4 days. Reheat gently on the stove.
