Ingredients
  

  • 4 salmon fillets (6 oz each)
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth (or water)
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 1 teaspoon dried oregano
  • ¼ teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions
 

  • Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Prepare Quinoa: In a medium saucepan, combine the quinoa and vegetable broth (or water). Bring to a boil, then reduce the heat and cover. Simmer for 15-20 minutes until the liquid is absorbed and the quinoa is tender. Fluff with a fork.
  • Prepare Salmon: Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil, lemon juice, garlic powder, oregano, salt, and pepper. Rub the seasoning evenly over the fillets.
  • Bake Salmon: Bake the salmon in the preheated oven for 15-20 minutes, or until it flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  • Assemble Dish: Serve each salmon fillet over a bed of quinoa. Garnish with fresh parsley and lemon wedges.

Notes

  • Make Ahead: Prepare the quinoa and season the salmon in advance. Store the cooked quinoa and seasoned salmon separately in the fridge for up to 2 days. Bake the salmon just before serving.
