Beef Enchilada Bake is a cheesy, flavor-packed casserole with layers of seasoned ground beef, tortillas, and enchilada sauce. It's an easy, crowd-pleasing meal perfect for weeknights or gatherings!
110 oz can diced tomatoes with green chilies (drained)
115 oz can black beans, drained and rinsed (optional)
1 ½cupsshredded cheddar cheese
1 ½cupsshredded Monterey Jack cheese
10small flour or corn tortillascut into halves

Instructions
STEP NO.1: PREHEAT OVEN
Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
STEP NO.2: COOK THE BEEF
In a large skillet over medium heat, cook ground beef until browned. Add onion and garlic, cooking until softened. Drain any excess grease.
STEP NO.3: SEASON AND ADD SAUCE
Stir in chili powder, cumin, paprika, salt, and black pepper. Add enchilada sauce, diced tomatoes, and black beans (if using). Simmer for 2-3 minutes.
STEP NO.4: LAYER THE CASSEROLE
Spread a thin layer of the beef mixture at the bottom of the prepared baking dish.
Layer tortilla halves over the beef mixture, followed by more beef and a sprinkle of cheddar and Monterey Jack cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
STEP NO.5: BAKE UNTIL GOLDEN
Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is melted and bubbly.
STEP NO.6: GARNISH AND SERVE
Let the casserole rest for 5 minutes before slicing. Garnish with fresh cilantro and serve with sour cream.
