Ingredients
  

  • 2 lbs beef chuck cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder adjust to taste
  • 1 14 oz can diced tomatoes
  • 1 cup coconut milk
  • 1 cup beef broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Instructions
 

Brown Beef:

  • Heat oil in a large pot over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside.

Sauté Aromatics:

  • In the same pot, add onion, garlic, and ginger. Cook until softened, about 5 minutes.

Add Spices:

  • Stir in curry powder, cumin, coriander, turmeric, and chili powder. Cook for 1–2 minutes until fragrant.

Simmer Curry:

  • Return beef to pot. Add diced tomatoes, coconut milk, and beef broth. Stir well and bring to a boil.

Cook:

  • Reduce heat to low, cover, and simmer for 1 to 1 ½ hours, until beef is tender and sauce thickens. Season with salt and pepper.

Serve:

  • Garnish with fresh cilantro if desired. Serve hot with rice or flatbreads.
