2 lbs beef chuck cut into cubes 2 tablespoons vegetable oil 1 large onion chopped 4 cloves garlic minced 1 tablespoon fresh ginger grated 2 tablespoons curry powder 1 teaspoon ground cumin 1 teaspoon ground coriander 1 teaspoon turmeric 1 teaspoon chili powder adjust to taste 1 14 oz can diced tomatoes 1 cup coconut milk 1 cup beef broth Salt and pepper to taste Fresh cilantro for garnish optional
