2 tablespoons olive oil 1 onion chopped 3 cloves garlic minced 2 carrots sliced 2 celery stalks chopped 1 15 oz can diced tomatoes 1 teaspoon dried thyme 1 teaspoon dried oregano ½ teaspoon smoked paprika optional 6 cups vegetable or chicken broth 2 15 oz cans mixed beans (or any combination), drained and rinsed Salt and pepper to taste 2 cups chopped spinach or kale optional Juice of ½ lemon optional, for brightness
