Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 1 15 oz can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika optional
  • 6 cups vegetable or chicken broth
  • 2 15 oz cans mixed beans (or any combination), drained and rinsed
  • Salt and pepper to taste
  • 2 cups chopped spinach or kale optional
  • Juice of ½ lemon optional, for brightness

Instructions
 

Sauté Vegetables:

  • Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook for 5–7 minutes until softened.

Add Seasonings & Broth:

  • Stir in tomatoes, thyme, oregano, paprika, and broth. Bring to a boil.

Add Beans & Simmer:

  • Add the beans, reduce heat, and simmer uncovered for 45–60 minutes, until vegetables are tender and flavours are developed.

Finish Soup:

  • Stir in spinach or kale (if using) and cook for 5 more minutes. Add lemon juice and season with salt and pepper to taste.

Serve:

  • Ladle into bowls and serve warm with crusty bread.
