Ingredients

  • 3 ripe bananas, sliced
  • 1 cup brown sugar
  • ¼ cup unsalted butter
  • ¼ cup dark rum (optional)
  • ½ teaspoon cinnamon
  • 2 cups whole milk
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1 cup heavy cream, whipped
  • 1 teaspoon vanilla extract
  • 1 box vanilla wafers
  • Whipped cream & caramel sauce for topping

Instructions

  • Make Bananas Foster: In a pan, melt butter and stir in brown sugar and cinnamon. Add banana slices and cook until caramelized.
  • Add Rum (Optional): Pour in rum, then carefully ignite to flambé. Let the flames subside, then remove from heat.
  • Prepare Pudding: Whisk together milk and pudding mix until thick. Fold in whipped cream and vanilla extract.
  • Assemble Layers: In a dish, layer vanilla wafers, pudding, and caramelized bananas. Repeat layers.
  • Chill & Serve: Refrigerate for 2 hours. Top with whipped cream and caramel sauce before serving.

Notes

  • Make Ahead: Prepare the pudding up to 24 hours in advance and refrigerate until ready to serve.
  • Customizing the Flavor: Swap rum with maple syrup for a non-alcoholic version. Add a pinch of nutmeg for extra warmth.
  • Serving Suggestions: Serve chilled with caramel drizzle and a sprinkle of cinnamon. Pairs well with vanilla ice cream.
  • Storage Tips: Store leftovers in an airtight container in the fridge for up to 3 days.
