Ingredients
  

For the Dough:

  • 1 cup mashed ripe bananas about 2–3 bananas
  • cup warm milk 110°F/43°C
  • 2 ¼ teaspoons active dry yeast 1 packet
  • ¼ cup granulated sugar
  • cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 3 to 3 ½ cups all-purpose flour
  • ½ teaspoon salt

For the Filling:

  • ½ cup brown sugar packed
  • 2 tablespoons ground cinnamon
  • ¼ cup unsalted butter softened

For the Cream Cheese Icing:

  • 4 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • 1 to 1 ½ cups powdered sugar
  • ½ teaspoon vanilla extract
  • 1 –2 tablespoons milk optional, to thin

Instructions
 

Activate Yeast:

  • In a small bowl, combine warm milk, yeast, and 1 teaspoon sugar. Let sit for 5–10 minutes until frothy.

Make Dough:

  • In a large bowl, mix mashed bananas, melted butter, sugar, vanilla, and egg. Add the yeast mixture and stir. Gradually add flour and salt, mixing until dough forms.

Knead Dough:

  • Turn dough onto a floured surface and knead for 6–8 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise until doubled (about 1 hour).

Prepare Filling:

  • Mix brown sugar and cinnamon in a bowl. Roll dough into a 16x12-inch rectangle. Spread softened butter over dough, then sprinkle evenly with cinnamon sugar.

Roll and Slice:

  • Roll dough tightly from the long side into a log. Slice into 12 equal rolls. Place rolls in a greased 9x13-inch pan.

Second Rise:

  • Cover and let rise for 30–40 minutes until puffy.

Bake:

  • Preheat oven to 350°F (175°C). Bake rolls for 20–25 minutes until golden brown.

Make Icing:

  • Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy. Add milk if needed to thin.

Serve:

  • Spread icing over warm rolls. Serve immediately.

Notes

  • Make Ahead: Dough can be prepared and refrigerated overnight. Bake fresh in the morning.
  • Banana Ripeness: Use ripe bananas with brown spots for best flavor and sweetness.
  • Storage: Store leftovers covered at room temperature for 2 days or refrigerate up to 4 days.
  • Freezing: Freeze baked rolls (without icing) for up to 2 months; thaw and reheat before icing.
  • Add-Ins: Add chopped nuts or chocolate chips to the filling for extra texture.
