Ingredients
  

  • 1.5 lbs 680g pork tenderloin
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried rosemary or thyme
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish

Instructions
 

  • Preheat Oven: Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment paper.
  • Prepare Marinade: In a small bowl, whisk together balsamic vinegar, olive oil, garlic, rosemary, Dijon mustard, salt, and pepper.
  • Marinate Pork: Brush pork tenderloin with the balsamic mixture. Let sit 5–10 minutes if desired.
  • Bake: Place pork on prepared baking sheet and roast 25–30 minutes until internal temperature reaches 145°F (63°C).
  • Rest & Serve: Let pork rest 5 minutes before slicing. Garnish with parsley and serve with your favorite sides.
