Ingredients
  

For the Cookies:

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ¾ cup cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

For the Filling:

  • ½ cup unsalted butter softened
  • 1 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk

Instructions
 

  • Preheat Oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Make Cookies: In a bowl, cream together butter and sugar until fluffy. Add egg and vanilla, mixing well. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually mix dry ingredients into wet ingredients.
  • Shape Cookies: Roll dough into 1-inch balls and place on prepared baking sheets, spacing 2 inches apart. Flatten slightly.
  • Bake: Bake 12–14 minutes until cookies are set. Cool completely on a wire rack.
  • Prepare Filling: Beat butter, powdered sugar, vanilla, and milk until smooth and creamy.
  • Assemble Cookies: Spread or pipe filling onto one cookie and sandwich with another. Repeat for remaining cookies.
