Ingredients
  

  • 4 large eggs
  • 1 cup cottage cheese
  • ¼ cup shredded cheddar cheese
  • ¼ cup chopped green onions
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Toasted bread (for serving)

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a medium bowl, whisk together the eggs, cottage cheese, shredded cheddar cheese, chopped green onions, salt, and pepper until well combined.
  • Pour the mixture into a greased 9x9-inch baking dish or four individual ramekins.
  • Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the top is lightly golden.
  • Remove from the oven and let cool slightly.
  • Garnish with fresh parsley and serve with toasted bread.
