This bacon cheeseburger meatloaf combines juicy ground beef, melted cheese, and crispy bacon for the ultimate comfort food. It’s hearty, flavourful, and tastes just like a classic cheeseburger — without the bun!

Ingredients
  

  • 2 lbs ground beef
  • 1 cup shredded cheddar cheese
  • ½ cup breadcrumbs
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 eggs beaten
  • ¼ cup ketchup
  • 1 tablespoon mustard
  • 1 tablespoon Worcestershire sauce
  • 6 slices cooked bacon chopped
  • Salt and pepper to taste
  • Extra ketchup or barbecue sauce for topping

Instructions
 

  • Preheat Oven: Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
  • Mix Ingredients: In a large bowl, combine ground beef, cheese, breadcrumbs, onion, garlic, eggs, ketchup, mustard, Worcestershire sauce, bacon, salt, and pepper. Mix until just combined.
  • Shape and Bake: Form the mixture into a loaf and place it in the pan. Spread ketchup or barbecue sauce on top.
  • Bake: Bake for 55–60 minutes until cooked through and the top is slightly caramelized.
  • Serve: Let rest for 10 minutes before slicing. Serve warm with mashed potatoes or vegetables.

Notes

  • Make Ahead: Prepare the meatloaf mixture up to a day ahead and refrigerate until ready to bake.
  • Variations: Try topping with crispy fried onions or adding pickles for a real cheeseburger taste.
