Ingredients
  

For Potato Skins:

  • 4 medium russet potatoes washed
  • 6 slices bacon cooked and crumbled
  • 1 cup cheddar cheese shredded
  • 2 tablespoons green onions chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions
 

Bake Potatoes:

  • Preheat oven to 400°F (200°C). Pierce potatoes with a fork, rub with olive oil, and sprinkle with salt. Bake for 45 minutes until tender.

Prepare Potato Skins:

  • Cool potatoes slightly. Cut in half lengthwise and scoop out some flesh to create a cavity for filling.

Fill and Top:

  • Sprinkle each potato skin with salt and pepper, then fill with shredded cheddar and crumbled bacon.

Bake Again:

  • Return to oven and bake for 10–12 minutes until cheese is melted and bubbly.

Serve:

  • Top with chopped green onions and serve warm as appetizers or game day snacks.

Notes

  • Make Ahead: Bake potatoes ahead of time and store for up to 2 days. Assemble and bake before serving.
