This grilled cheese is a delicious twist on the classic, featuring creamy avocado, gooey mozzarella, and juicy tomato slices. It’s the perfect comfort food for lunch or dinner—crisp on the outside and melty inside.

Ingredients
  

  • 4 slices sourdough or sandwich bread
  • 1 ripe avocado sliced or mashed
  • 1 –2 medium tomatoes thinly sliced
  • 4 slices mozzarella cheese or 1 cup shredded mozzarella
  • 2 tablespoons butter softened
  • Salt and pepper to taste
  • Optional: balsamic glaze or fresh basil leaves

Instructions
 

Assemble the Sandwiches:

  • Spread butter on one side of each bread slice. On the unbuttered side, layer avocado, tomato slices, and mozzarella. Season with a pinch of salt and pepper.

Grill:

  • Heat a skillet over medium heat. Place the sandwiches butter-side down and cook for 3–4 minutes per side, pressing slightly, until golden brown and the cheese has melted.

Serve:

  • Slice in half and serve hot. Add a drizzle of balsamic glaze or fresh basil for extra flavour.

Notes

  • Make it Fancy: Add pesto or swap mozzarella for fresh burrata.
  • Crispier Tip: Use mayo instead of butter for an ultra-crispy crust.
  • Storage: Best eaten fresh, but you can reheat leftovers in a skillet to retain crispness.
