APPLE SAUSAGE STUFFED BUTTERNUT SQUASH

  • 2 butternut squash halved and seeded
  • 1 lb pork sausage mild or spicy
  • 1 apple peeled and diced
  • ½ cup onion chopped
  • 2 cloves garlic minced
  • ¼ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper
  • ½ teaspoon dried thyme

Instructions
 

Prepare Squash

  • Preheat oven to 400°F (200°C). Brush butternut squash halves with olive oil, season with salt and pepper, and place cut side down on a baking sheet. Roast for 25–30 minutes until tender.

Cook Filling

  • While squash roasts, cook sausage in a skillet over medium heat until browned. Add onion, garlic, and apple; sauté for 5 minutes.

Mix Filling

  • Remove from heat and stir in breadcrumbs, Parmesan cheese, and thyme. Adjust seasoning with salt and pepper.

Stuff Squash

  • Turn roasted squash cut side up. Spoon sausage-apple mixture into each half.

Bake and Serve

  • Return to oven and bake 10–15 minutes until filling is golden and heated through. Serve warm.

  • Tip: Choose firm, medium-sized butternut squash for easy roasting and stuffing.
