Preheat oven to 400°F (200°C). Brush butternut squash halves with olive oil, season with salt and pepper, and place cut side down on a baking sheet. Roast for 25–30 minutes until tender.
Cook Filling
While squash roasts, cook sausage in a skillet over medium heat until browned. Add onion, garlic, and apple; sauté for 5 minutes.
Mix Filling
Remove from heat and stir in breadcrumbs, Parmesan cheese, and thyme. Adjust seasoning with salt and pepper.
Stuff Squash
Turn roasted squash cut side up. Spoon sausage-apple mixture into each half.
Bake and Serve
