Ingredients
  

  • 1 pound elbow macaroni
  • 1 cup mayonnaise (real mayonnaise recommended)
  • ¼ cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons granulated sugar
  • 1 tablespoon celery seed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup finely chopped onion (red or yellow)
  • ½ cup finely chopped celery
  • ¼ cup finely chopped green bell pepper
  • ¼ cup sweet pickle relish

Instructions
 

  • Cook the macaroni: Cook the macaroni according to package directions until al dente. Drain and rinse with cold water to stop the cooking process. Let cool completely.
  • Make the dressing: In a large bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, celery seed, salt, and pepper until smooth.
  • Combine ingredients: Add the cooled macaroni, celery, onion, green bell pepper, and sweet pickle relish to the dressing. Stir well to coat all the ingredients.
  • Chill: Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  • Serve: Serve chilled.

Notes

  • Mayonnaise: Real mayonnaise is recommended for the best flavor and texture. You can use light mayo, but the texture will be different.
  • Vinegar: Apple cider vinegar adds a tangy flavor that balances the richness of the mayonnaise. You can adjust the amount to your liking.
