Ingredients
  

  • 2 cups elbow macaroni
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sugar
  • Salt and black pepper to taste
  • ½ cup diced red bell pepper
  • ½ cup diced celery
  • ¼ cup diced red onion
  • 2 tablespoons chopped sweet pickles or relish
  • 2 hard-boiled eggs chopped (optional)
  • 1 tablespoon chopped fresh parsley optional

Instructions
 

Cook Pasta:

  • Boil macaroni in salted water until al dente. Drain and rinse under cold water. Let cool.

Make Dressing:

  • In a large bowl, whisk together mayonnaise, sour cream, vinegar, mustard, sugar, salt, and pepper.

Combine Salad:

  • Add cooled macaroni, bell pepper, celery, onion, pickles, and eggs (if using) to the dressing. Toss gently until well coated.

Chill & Serve:

  • Cover and refrigerate for at least 1 hour. Stir before serving and sprinkle with parsley if desired.
