Ingredients
  

For the Peach Filling:

  • 1 ½ cups fresh or canned peaches, sliced
  • 1 tablespoon granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon lemon juice
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract

For the Cobbler Topping:

  • cup all-purpose flour
  • 1 tablespoon granulated sugar
  • ¼ teaspoon baking powder
  • 1 pinch salt
  • 1 ½ tablespoons cold unsalted butter, cubed
  • 2 tablespoons milk

For Serving:

  • 2 small scoops vanilla ice cream
  • as desired ground cinnamon

Instructions
 

Prepare the Peaches

  • Preheat the air fryer to 350°F (175°C). In a small bowl, toss the peaches with sugar, cornstarch, lemon juice, cinnamon, and vanilla extract.

Make the Topping

  • In another bowl, combine the flour, sugar, baking powder, and salt. Cut in the cold butter with a fork until the mixture resembles coarse crumbs. Stir in the milk until a soft dough forms.

Assemble

  • Divide the peach mixture between two oven-safe ramekins. Spoon the cobbler topping evenly over the peaches.

Air Fry

  • Place the ramekins in the air fryer basket and cook for 9–10 minutes, until the topping is golden brown and the peach filling is bubbling.

Serve

  • Carefully remove the ramekins and let the cobblers cool for 2–3 minutes. Serve warm with a scoop of vanilla ice cream and a light sprinkle of cinnamon.
