Ingredients
  

For the Blooming Onion:

  • 1 large sweet onion Vidalia or yellow onion (about 1 lb)
  • ¾ cup all-purpose flour
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • ½ cup milk
  • 1 cup panko breadcrumbs
  • 1 cup regular breadcrumbs
  • olive oil cooking spray

For the Dipping Sauce:

  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon horseradish prepared
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce

Instructions
 

Prepare Onion:

  • Cut off about ½ inch from the top (stem end) of the onion (not the root end). Peel off the outer papery skin. Leave the root end intact.

Cut Onion into Bloom:

  • Place onion cut-side down. Starting about ½ inch from the root, make 4 evenly spaced vertical cuts down to the cutting board. Then make 4 more cuts between the first cuts to create 8 sections total.

Soak in Ice Water:

  • Gently separate the petals with your fingers. Place onion in a bowl of ice water for 30 minutes to help petals open further. Drain and pat completely dry.

Make Flour Mixture:

  • In a bowl, combine flour, paprika, cayenne, garlic powder, onion powder, salt, and pepper.

Make Egg Wash:

  • In another bowl, whisk eggs and milk together.

Make Breading Mixture:

  • In a third bowl, combine panko and regular breadcrumbs.

Coat Onion:

  • Dredge onion in flour mixture, shaking off excess. Dip into egg wash, letting excess drip off. Then coat generously with breadcrumb mixture, pressing gently to adhere. Repeat for extra crispy coating (flour → egg → breadcrumbs twice).

Preheat Air Fryer:

  • Preheat air fryer to 380°F (193°C) for 3-5 minutes.

Spray & Place Onion:

  • Spray coated onion generously with cooking spray. Carefully place in air fryer basket, root side up.

Air Fry:

  • Air fry at 380°F (193°C) for 12-15 minutes, until golden brown and crispy. Check at 10 minutes and spray any dry spots.

Make Dipping Sauce:

  • While onion cooks, whisk together mayonnaise, ketchup, horseradish, paprika, cayenne, garlic powder, and Worcestershire sauce. Refrigerate until serving.

Serve:

  • Carefully remove blooming onion from air fryer. Serve immediately with dipping sauce.

Notes

  • Make Ahead: The blooming onion is best served fresh. You can prep the onion (cut and soak) up to 4 hours ahead, then coat and air fry just before serving.
  • Variations: Use gluten-free flour and gluten-free panko for a gluten-free version. Add ½ teaspoon of smoked paprika to the flour for a smoky flavor. For extra spicy, add more cayenne to both coating and sauce.
