Ingredients

  • 8 oz semi-sweet chocolate chopped
  • ¼ cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons amaretto liqueur
  • ½ cup cocoa powder or powdered sugar for rolling

Instructions

Melt the Chocolate:

  • In a heatproof bowl, combine the chopped chocolate, heavy cream, and butter. Microwave in 20-second intervals, stirring between each, until melted and smooth.

Add Amaretto:

  • Stir in the amaretto liqueur until fully incorporated into the chocolate mixture.

Chill the Mixture:

  • Cover the bowl and refrigerate the mixture for about 2 hours or until firm enough to scoop.

Shape the Truffles:

  • Once chilled, use a spoon or melon baller to scoop out small portions of the mixture. Roll each into a smooth ball with your hands.

Coat the Truffles:

  • Roll the truffles in cocoa powder or powdered sugar to coat them completely. Place them on a parchment-lined tray.

Refrigerate and Serve:

  • Place the coated truffles back in the fridge to set for 30 minutes before serving.
